Auberge Provence seems to be the most romantic of the two to me. It is a five star guesthouse, which means that it has the highest rating it can achieve. I must be honest, I have never stayed there but it looks lovely.

I know you ruled out Greece, but I would highly suggest it. October is no longer tourist season so prices dip and there are TONS of things to do. The weather is also incredibly beautiful at that time of the year and believe it or not, if you look around you may find that going to Greece can be comparable to the Caribbean in price.
Well you could have people donate to a charity instead of wedding gifts as part of rationalizing. Also there is the whole "Go Green" revolution that is taking place. Another thing to do is use things in your wedding that you can use again or give to guests to use after the wedding. That way they will be re-usable and not only good for that day.

The answer is yes – there is usually more to do at a ski resort than ski. Most ski areas in the USA & Canada and western Europe are either at or very close to a town with shops, restaurants, things to do, etc. I don't know anything about skiing in New Zealand, but it's probably similar.
However, it depends on the resort and you need to do the research. A real travel agent may be able to help a lot. Consider joining or at least making contact with a ski club so you can talk to real people who can offer first-hand advice.
Note that the "resort" usually refers to the ski area. Hotels at resorts offer services & amenities usually in proportion to the cost. Do look for a hotel with a heated pool or at least a hot-tub.
Most ski areas also focus on skiing for beginners, but not all. Adult beginners learn from the regular adult ski-school, but a resort with a good childrens' program will probably also do a good job for adults. Look for resorts that clearly have a separate ski-school for children with instructors that specialize in teaching kids. Again, they will also probably take good care of adult beginners.
Look for a ski resort with a significant percentage of 'easy" slopes. Usually Green = Easy, Blue = medium, and Black = expert.
It takes most people about 3 full days of lessons before it starts to be fun. Before that is work and it can be frustrating because you have these long boards strapped to your feet, the ground is slippery + not level, and you fall down a lot (it doesn't hurt – it's just frustrating). That is why it is REALLY important to not try to learn ski on your own – get professional lessons. However, there is nothing like it once you learn enough for it to be fun.

Well, if you would like deserted white sand beaches i would definitely recommend the Corn Islands in the Carribean coast of Nicaragua (Central America). There is big corn island, and little corn island, i however, would rather you stay in big corn island because little corn island doesn't really have places to stay, only about 500 locals live there. The reefs around both islands are beautiful and full of exotic and colorful marine life, you can also go scuba diving or snorkeling. There are NO high rise resorts on the island or even the nearest city on Mainland Nicaragua. As for safety, i'm sure you will be happy to hear that Nicaragua is actually rated as the SAFEST country in Latin America, however, it depends on the source.http://www.pronicaragua.org/index.php?option=com_content&task=view&id=24&Itemid=97 But according to statistics it is actually the 2nd safest, after Uruguay. 3,000 is too much for a honeymoon in the Corn Islands lol. To get the the islands you have to arrive at the Sandino International Airport in the capital of Nicaragua which is Managua, from there the airline "La Costena" will cost $100 and will get you to the island in less than 1 hour.
